Earth's crust bares a big spectrum of rock layers, which reflect the development of climate and landscape for millions of years until now.

The upper layer is denominated as soil. It covers the bedrock partially for a few centimeters partially for a couple of meters.

Plants, especially vines, use the soil for fixation and as a reservoir of water and nutrients.

Peculiarity of every vineyard, as minerality, water retention and the ability of growing warm, individualises the different wines and are summarised under the term „terroir“.

Using a special method of preparation, soils can be saved and preserved. In the following, the „peelings“ can be used for all thinkable kinds of presentation.
